In my experience, routine service records at CJDR dealerships stay in house at the servicing dealership. The actions that are in the Chrysler computer generally contain inservice date, warranty work, and recalls.
As you have noted, MANY owners do their own service which will only be known (but hopefully documented) by said owner.
If you are looking at any early Gen V, be sure that it passed all of the recalls...about 5 or 6 for 2013 and some 2014 Vipers. The biggest (in my opinion) involves R-28. If the car passed it, you the Viper got a 10 powertrain warranty. If it failed, the Viper got a new motor. Be sure to run the VIN yourself at the Chrysler selfserve site...then, ask your local CJDR dealer to do the same to confirm recall info and warranty.
