Luckily, my valve covers are still fine and to keep them nice I was wondering what is it that causes or promotes the paint to bubble or flake off? Anything to avoid or do to maintain the paint?

my guess is age/heat. Not sure if there is anything to do to avoid it. Powder coating is good option when comes time to repair.
chemicals can also do it as well as heat and age

Most likely its corrosion under the paint. This is really common with Magnesium. JMB specializes in Viper
engine powdercoating, call Justin 314-540-1541.
Heat and age are most likely the cause. My driver side is doing it on my RT. The was a guy/company that did a refresh on them. It was a bit pricy from what I remember. JMB Performance is the company.
I had my intake and valve covers done by JMB recently. Turned out good. They are slow and will tell you it's growing pains but I recommend them on the premise it's worth the wait. Assuming you can wait.
I recommend JMB as well...I just had them build me an air box. Great quality and worth the wait.

That's the trouble with magnesium covers. All cars with painted mag covers do this. Oil gets under the paint by getting through the metal and pushing it up from underneath, it's completely unavoidable. I've redone my BMW's and just recently had the Viper's re-powder-coated because of this.
Some people suggest painting the INSIDE as well to prevent this, but it would have to be NEW metal imo and secondly, I doubt the paint would last on the inside. Knowing this was a potential problem I took every precaution with mine ('94) and still wrecked the damn paint, I was so disappointed in myself hah.
