It'll come down to whether or not you can shift well, and get traction.
Here is an old video of my first viper. Its all stock. With your mods if you shift good, you will beat the lambo. Try a 40 roll in first, if you have sticky tires. If not do a 60 roll in second.
My stock '14 TA vs a stock Huracan. Dead even from a roll, but the Viper will begin to pull away in 5th gear. If the Huracan driver is willing to stay in it that long.
It's amazing how many cars a stock Gen V can pull away from in a roll race. I've surprised a lot of hot cars in my area. It takes a hell of a quick car, usually extremely modified to put the Viper in the mirror. I guess I'm a bit lucky though too, none of the big $$$ cars like the 4 Maclarens and the 918 around here ever get driven.
It seems like 50mph is the "sweet spot" for your best starting speed. Take off from there and you should have a very good chance it seems.
