Does anyone know of a good insurance company for a Viper? I'd like one where I could add track insurance when I go do a HPDE. I think there might be a VOA member who offers this service.

Check with your policy, often times HPDE with an instructor is covered. Not always, but many times it is. Because it is considered driving education, not racing. Many policies will say no coverage for "any timed event."
Otherwise if you are gonna be in the car yourself, getting timed, or racing against others then what ViperTony said is correct.
As far as what's a a good company? However many people reply is how many answers you will get. Just make sure to get AGREED VALUE. Not "stated value." They are similar but very different where it counts which is when you wreck, AGREED VALUE means the amount you are getting is not up for discussion. It's very clearly on your paperwork. Also many times wih agreed value even if the car isn't totaled you have the option to just take the money and give them the car. I had that option when I was with Private Client Group.
Otherwise just find a policy that you like for agreed value. There are so many things that determine cost so if someone says they insured the same car as you did for 800/yr that doesn't mean you will. It's a lot more than age and driving record in their algorithms. So shop around or use a broker. My former partner is a broker and they specialize in high end policies, I am glad to give you his contact info if you would like. He knows what it is we need as Viper owners in our policy.
Otherwise, for pure track insurance "ontrackinsurance" is the way to go and I believe it is owned by a member here, he definitely runs it but I think he owns it as well.

I have used Lockton Insurance several times. Insurance is based on agreed on value but you do have a deductible. MotorsportReg.com also has it. I use that link to register for racing events and have found them to be very customer oriented. Both cover instructor but liability is on you. In other words, you and your car are covered but if you damage someone else on the track it's on you. Believe me, after seeing several cars totaled and damaged at Road Atlanta, it is worth what it costs.
I am not required to have Track Insurance, but i did contact ACR Steve about another type of insurance.
Internet rumor has it that some of the big companies will cover hpde as long as there isn't any lap timing involved. I cannot independently confirm.
As I said in my post, this depends on your policy. My policy with Private Client Group would not cover any "timed events." But would cover "driver education." Which includes HPDE Check your policy or call if you are not sure.
Ontrack insirance is the way to go for being covered in the event of racing or hot laps, etc.
My personal thought is as far as liability goes, people getting on the track and shouldn't come after you for dinging up their car unless you were doing something wildly flagrant like running when the track is stopped for a wreck.

You can buy multiple event coverage at a discount but most companies look at "sanctioned" events. In other words, they look for events that are scheduled by a club or NASA, Chin Motorsports, etc. before they will insure a car. This prevents folks from just going out for a track day that doesn't have some type of control over who gets on the track. Several of our members have damaged their cars on track days and did not have insurance. When you look at totalling a high dollar car, the insurance is cheap. You are not so likely to screw up with an instructor in the car but when you get to HPDE levels where you can go out on your own it is easy to exceed your limitations. Yes, insurance is expensive but less so than repairing your high dollar car on your own $$$.
Note also that the deductible is typically 10% of the car's value with a large minimum (for cheaper cars).
IMO, a necessary expense.
I've heard too many experienced Viper owners & Pro drivers say "if you're gonna drive a Viper anywhere close to it's limits, you better know what you're doing and have plenty of experience and practice doing it".
