I am looking for a track only wheel. I am caught between the ozs and gen5 sidewinders brand new. The sidewinders are 18 19 set up by default. Is this better on the track? Or should I go with OZs and go back 18 front and 18 back? My tire of choice is the Proxys in any case.

you will have more tire options with an 18/18 setup

Do you stay with the stock width or change to something else?

I ran 18x12.5 square on my Gen 2. 335's all the way around. Most do 18x11 and 18x13 I believe

If you can wait a week or two, I'll have some better options available for you....in 18x11 and 18x13. At less than $1500/set :)

The 6 spoke wheels are very light weight and make great track wheels. 18" front, 19" rears

NineBall is offering a pretty good deal. Might be worth it to take it. I'll admit I like the stock viper wheels on all gens and particularly like when you put newer ones on older vipers. But I think if you are serious about the track, 18s all around is the way to go.

Similar weight to the Sidewinder IIs?

Yes. Same construction. Forgestar F14 wheels, I finally got them to build 18" rears and wider 18x11 fronts.
